PS--Would I peeve you really horribly if I got all picky and English Majorish for a second and pointed out that there's no second " i " in " recipe " or " recipes " ? Sorry. <blush> x Anyway, I made this for a potluck out of what happened to be handy, and to my surprise, it came out extremely nummy: x -Begin Recipe Export- QBook version 1.00.14 x Title: " Paradise Potluck " Rice Keywords: side dishes, main dish option, vegetarian All amounts are approximate: x 1/2 to 1 c. rice 1/2 c. bulghur rich vegetable broth (you can use good vegetable broth powder/soup base and water, as I did) a splash of red wine (I use dealcoholized) 1 rounded tsp. rosemary, or to taste 1 can sliced carrots, drained 1/2 to 1 tsp. cumin chipotle oil (mild) OR peanut, sunflower or walnut oil and a pinch of cayenne 1/2 medium head cabbage, diced 1 large onion, diced 1 tsp. caraway seeds soy sauce (I use mushroom soy) 1/2 c. water (approx.) x MAIN DISH OPTION: thawed frozen tofu, water thoroughly squeezed out, shredded x Cook rice and bulghur in stock and wine with rosemary. Dice veggies while it cooks. x When rice is perhaps five minutes from done, heat 2 tbsp. oil in large skillet. When very hot but not smoky, add cumin and stir for a moment till aroma develops. Add carrots and saute till they begin to color slightly; add tofu at the same time if desired. x Remove carrots to a bowl. Add another tbsp. of oil to skillet and heat. Saute onion and cabbage till beginning to wilt; add caraway seeds, a splash of soy sauce and about 1/2 c. water. Steam uncovered, stirring often, till done but not limp. Remove from heat. x After rice finishes cooking, let sit 5 min. covered, then fluff. In a casserole or lare serving dish, mix veggies into rice.
