I call it cross-cultural spaghetti as it combines the typical Italian tomato base with the soy sauce flavors of the East. Pasta 1 tbsp olive oil 1 eggplant 1/4 cup of soy sauce Two 15 oz cans of stewed tomatoes Dash of red hot chili oil Start boiling water and cook your favorite type of pasta. Cut the eggplant into bite sized cubes. Heat up oil in a frying pan and place the eggplant in the pan. Add 1/2 cup water to the eggplant and allow the vegetable to cook for a few minutes. Add soysauce, hot oil, and stewed tomatoes to the frying pan. Allow the sauce to simmer (low boil) until the eggplant is soft and chewy. Serve over pasta.
