Quick Coconut Bread 2 loaves

4 C flour

 

1/3 C sugar

 

2 tsp baking powder

 

1/4 tsp salt

 

 

1 egg, beaten

 

1 C canned or fresh coconut milk or milk

 

1/2 C butter or margarine, melted

 

1 tsp vanilla extract

 

2 C grated unsweetened coconut

 

1 C currants or raisins (optional)

 

 

 

Preheat oven to 350 F.

 

 

Sift the dry ingredients into a mixing bowl. Blend in egg, milk,

 

butter, & vanilla. Mix in the grated coconut ( & currants/raisins).

 

Turn out onto a floured board and knead slightly. Shape into 2 loaves

 

and pat into 2 buttered medium loaf pans. Bake 40-45 min, until a

 

toothpick in the center comes out clean.
