Pasta with broccoli

Pasta with broccoli

 

 

 

Time: 15 mins

 

Acknowledgements: This is an attempt to recreate one of the

 

many delicious dishes served at Ivo Olive's Café de l'Avenir

 

in Lausanne, the best pasta restaurant in the world.

 

 

Ingredients per person:

 

3 oz pasta (preferably De Cecco - casareccia is the preferred

 

shape)

 

1/2 to 1 head of broccoli, cut up (including stalks)

 

1-2 cloves garlic, crushed

 

olive oil and grated parmesan

 

 

1.

 

Cook the pasta with plenty of salt.

 

2.

 

5 mins before the pasta is ready, add broccoli bits.

 

3.

 

Set aside 1 cup of pasta water. DON'T FORGET THIS!!

 

4.

 

Drain pasta and broccoli.

 

5.

 

In the pasta pan, cook the crushed garlic briefly in olive

 

oil. Add pasta and broccoli.

 

6.

 

Stir until thoroughly mixed in and heated through. Add a

 

couple of spoonsful of parmesan and some black pepper.

 

Check for salt and add enough of the reserved cooking

 

water to make it nice and moist.

 

7.

 

Serve with more parmesan on top.

Hi Bethany

 

I really enjoy receiving your recipes but

unfortunatley I cannot open files in RTF as an

attachment. Is there anyway else you can send them -

or simply as an e:mail.

 

I would be grateful.

are you getting the message and just not the attachement?

my program aparently sends attachemnets as rtf if text....but I always put

the recipie in the body of the message not an attachement

 

I will try not to use attachements however >:)

a few have them to edit them out of one of the lists >:)
