Guest guest Posted August 22, 1999 Report Share Posted August 22, 1999 This takes very little prep time and only half an hour in the oven, it's cheap to make, and it's a big hit at potlucks. x Pardon my Xs between paragraphs; the ISP through which this BBS operates randomly strips out blank lines, for some unknown reason. x -Begin Recipe Export- QBook version 1.00.14 x Title: potluck _posole y arroz con queso_ Keywords: main dishes, side dishes, potluck, vegetarian x 1 15-oz can hominy, rinsed and drained 1 to 1 1/2 c cooked rice crumbled soybacon to taste 3 oz canned chopped green chiles, drained (chileheads, don't substitute hotter peppers; too much fire doesn't work well here) 4 oz sour cream, yogurt or tangy cottage cheese 4 oz. mild salsa + 1 tsp. chile powder - OR - 4 oz. bottled taco sauce (actually preferable in this dish) 1 lg. mild onion, minced 4-6 oz. grated sharp cheddar 2-3 Tbsp melted butter salt to taste and lots of black pepper x Saute onion in butter till translucent. Combine onion and butter with all other ingredients, toss well, and pour into an oiled casserole. Bake covered at 425^F for 30 minutes, till all is hot through and cheese is melted. Let stand 5 minutes before serving.
