CRUSTY MUSHROOM LOAF

 

1 crusty loaf

50g butter

50g flour

600ml milk

225g open cup mushrooms,whiped and sliced

2 Tblspn chopped parsley

 

Cut 1cm slice lengthways off the top of the loaf, carefully pull out the

bread,

Replace the lid and place on a baking tray, cook in a preheated moderate

oven (180C, 350F) for about 15 mins, till crisp,

Meanwhile to make the filling, melt the butter in a pan.

Stir in the flour and cook for 1 min, remove from heat and gradually add

milk,blending well

Bring to boil and cook for 2-3 mins stirring constantly, until smooth and

thickened,

Stir in the mushrooms,parsley and salt & pepper to taste,

Fill the loaf shell with the mushroom mix and replace lid,

Return to the oven and bake for 10 mins,

Serve hot, cut into think slices
