Guest guest Posted August 18, 1999 Report Share Posted August 18, 1999 Tortellini Pesto Soup I have discovered a brand of tortellini that makes this soup utterly delectable. If you can find *Tommaso's Pasta - Potato & Garlic Tortellini, I heartily recommend using it for this soup. If you don't have access to it, use plain or spinach cheese-filled tortellini. 5 cups vegetable broth 1 summer squash, cut into small pieces 1 zuchinni squash, cut into small pieces 1 large carrot, cut into small pieces 1 9 oz. package of tortellini 2 -3 TBS pesto 1 Lemon or lemon juice Black pepper to taste 1. In a 2-quart saucepan, heat broth and vegetables until boiling. 2. Add tortellini and cook at a gentle boil for about 4 minutes, or until done. 3. Remove from heat and add pesto, a squeeze of lemon, and black pepper to taste. OPTIONAL GARNISH: A sprinkling of Italian cheese (mozzarella, parmesan, or romano) and a few croutons finish this soup beautifully. Serves 4. * For Tomasso's Pasta locations, call 1-888-TOMMASO.
