> Spanish Rice and Lentil Pilaf

> 500ml ( 2 cups ) vegetable stock

> 125ml (1/2 cup) green lentils, rinsed

> 125ml (1/3 cup) brown rice

> 7 ml ( approx. 2 tsp.) basil

> salt and pepper to taste

> 250ml (1 cup) cheddar cheese

> 1 can (19oz/540ml) stewed tomatoes

> Combine stock, lentils, rice, tomatoes, and basil. Boil, reduce heat, cover

> and simmer for 50 to 60 minute or until lentils and rice are tender and

> liquid has been absorbed.

Sprinkle with cheese.
