Guest guest Posted August 16, 1999 Report Share Posted August 16, 1999 LEMON AND GARLIC POTATO SALAD (Serves 5) My mother's recipe for a light, tasty potato salad. 2-1/2 pounds red potatoes 1/2 cup chopped parsley 1 clove garlic, minced Juice of 2 lemons 1 Tablespoon vegetable oil Salt and pepper to taste Boil potatoes, and cool.
