Guest guest Posted April 28, 2010 Report Share Posted April 28, 2010 Punjabi Chole (Chickpea Curry) Serves 4 Preparation 10 minutes Cooking: 2 hours INgredients: 1 tbsp Vegetable oil 500g Boiled or canned chickpeas 150g Onion, chopped 200g Canned chopped tomatoes 2 tbsp Tikka Masala Paste (a spice mixture - see below 1 tbsp Garam Masala Paste Sugar 200ml Water 1 tsp Fresh coriander leaves, chopped Heat the oil in a pan and saut & #233; the onions until light golden brown (about 3 - 4 minutes). Add Tikka Masala and Garam Masala Pastes and saut & #233; for a further 1 minute. Add the tomatoes, cook for a further 1 minute. Add the cooked chickpeas, sugar and water and mix well. Transfer to your Slow Cooker and cook on High for 1 1/2 - 2hrs. Garnish with fresh chopped coriander leaves and serve with warm chapattis. Tip: For a quick and easy alternative to chickpeas, you can use 200g dried yellow lentils. There is no need to pre-soak them, simply wash under running water and add to the pan. To make a paste, just add oil. Tikka Masala 1 * 1 teaspoon red pepper flakes * 1 teaspoon cumin seeds * 1 teaspoon ground coriander seeds * 1 teaspoon turmeric * 1 teaspoon salt or to taste * *Marinade: Add spices to 1/4 cup olive oil * 1. Place all ingredients in a blender, spice mill, or coffee grinder and pulse to a fine powder. 2. Place in a glass jar with lid. Tikka Masala 2: 1 batch (200 grams - if you're not going to use it a lot, halve the recipe) * 6 teaspoons coriander * 6 teaspoons cumin * 6 teaspoons garlic powder * 6 teaspoons paprika * 4 teaspoons garam masala * 3 teaspoons ginger, ground * 3 teaspoons dried mint (you can omit it with no ill results) * 2 teaspoons chili powder Directions You mix all these together and then keep the powder mixture for when you need it. If you couldn't get garlic powder you could replace it with fresh garlic when you add the required amount of mix to a dish. Garam Masala Spice Mix Ingredients * 225g - 2 1/2 cups coriander seeds * 110g - 1 cup cumin seeds * 110g - 1/4 lb large cardamoms * 50g - 1/2 cup cinnamon * 50g - 2/3 cups cloves * 110g - 1 cup peppercorns * 1tsp grated nutmeg Directions 1. roast the coriander and cumin seeds separately in a warm oven or under a low grill or dry fry in a panfor about 3-5min. 2. shake them around constantly if under a grill or in pan 3. be careful not to burn seeds 4. peel the cardamoms, removing husks and strawy bits. 5. grind all the spices on a blender or pestle and mortar 6. careful not to make the mixture too fine 7. store in an airtight container Garam Masala 2 Ingredients * 1/2 cup black pepper * 6 tablespoons dark caraway seeds * 2 tablespoons cinnamon * 1/2 cup coriander seeds * 2 1/2 tablespoons ground cloves * 2 tablespoons cardamom seeds Directions 1. dry fry the coriander seeds for 3-5 min, ov er low heat, shake constantly do not let burn 2. place all ing in a blender or mortar and pestle and grind ( do not grind too finely) 3. store in an air tight container Quote Link to comment Share on other sites More sharing options...
