I really enjoy this cookbook even though I'm not diabetic.

CROCKPOT PEPPERY RED ONIONS

 

Yield: 4 to 6 servings

INGREDIENTS

 

4 large red onions, quartered

1 tablespoon extra-virgin olive oil

1 teaspoon dried oregano leaves

1/4 cup water  or vegetable stock

Salt and pepper, to taste

Hot pepper sauce, to taste

 

DIRECTIONS

 

In crockpot , combine all ingredients except

hot sauce. Stir thoroughly, cover and cook on low for

8 hours or on high for 4 hours, until onions are tender.

Toss well with hot sauce and serve.
