Mae Jean CROCKPOT PEPPERY RED ONIONS Yield: 4 to 6 servings Source: " America*s Everyday Diabetes Cookbook " via The Diabetic Gourmet Daily Recipe Mailer INGREDIENTS 4 large red onions, quartered 1 tablespoon extra-virgin olive oil 1 teaspoon dried oregano leaves 1/4 cup water or vegetable stock Salt and pepper, to taste Hot pepper sauce, to taste DIRECTIONS In crockpot , combine all ingredients except hot sauce. Stir thoroughly, cover and cook on low for 8 hours or on high for 4 hours, until onions are tender. Toss well with hot sauce and serve.
