Guest guest Posted January 25, 2010 Report Share Posted January 25, 2010 The night before wash and chunk sweet potato and yukon potato for the topping; cook on low w/cinnamon stick; The morning of: 1/2 bag of soy crumbles 3 sliced mushrooms 1/4 bag frozen peas 3 cups chunked butternut squash and cheese pumpkin 2 cloves of garlic minced 1/2 diced vidalia onion 1 cup quinoa (rinsed) 1 cup amaranth 1/4 cup barley 3 cups of mushroom gravy 1 small red potato diced 1 carrot diced Combine all these ingredients; adding the gravy last; Mash the potato cooking overnight; I added a shot of vanilla agave while mashing the potato and cover the top of the above ingredients with potato mixture.
