Slow Cooker Sweet Potato Soup - 5 pts

Amount Measure Ingredient -- Preparation Method

3 sweet potatoes

2 cups broth

15 ounces canned sliced mangoes -- and their juices

1/4 teaspoon ground allspice

1/2 cup heavy cream

 

Use a 4-quart slow cooker.

 

Peel and cube the sweet potatoes and add them to your slow cooker with the

broth, mangoes, and allspice.

 

Cover and cook on low for 8 hours, or high for 4 hours.

 

When the potatoes are tender, blend with an immersion blender. Stir in the heavy

cream.

ths slounds lovely, do you think it would work with pumpkin or butternut Sq. I

don't have an seet potatoes at the moment but i do have lots of squash to use

up.

 

how does the mango add to it? it doesn't make it too sweet does it?
