Fruit Salsa

11 ounces canned mandarin oranges -- undrained

8 1/2 ounces canned sliced peaches -- undrained

8 ounces pineapple tidbits -- undrained

1 medium onion -- chopped

1/2 medium green pepper -- chopped

1/2 medium sweet red pepper -- chopped

1/2 medium yellow pepper -- chopped

3 cloves garlic -- minced

3 tablespoons cornstarch

4 teaspoons vinegar

tortilla chips

 

I serve this fruity salsa anywhere I use ordinary salsa. My son and I

experimented with different ingredients to find the combination we liked

best. Using the slow cooker minimizes prep time and maximizes the flavor.

 

In a slow cooker, combine the fruit, onion, peppers, garlic, cornstarch and

vinegar; stir well.

 

Cover and cook on high for 2 hours or until thickened and heated through,

stirring occasionally. Serve with tortilla chips.
