Guest guest Posted December 5, 2009 Report Share Posted December 5, 2009 A few weeks ago I roasted off loads of tomatoes in the oven for hours until they were all toasted and yummy. I cooled them over night and in the morning I popped them in the slow cooker with a spoon of sundried tomato paste, some veggie stock and I left it on low all day. At the end of the day I whizzed it all in a blender and passed it through a sieve. I added lots of pepper (coz I love that fresh ground pepper taste with tomatoes) and a small amount of cream. My fella loved this for tea with my home made bread. Last week I made the same again but I had less tomatoes so I roasted some red peppers (capsicum) with them and made red pepper and tomato soup in the same way. Lovely.
