If I had them, I would toss them in. I mean, you can, but it's flavor you're after and potatoes are kind of bland. They also tend to make it cloudy, and the potato skins will tend to darken it. Mainly what I use are the old stand-bys: carrots, celery (especially the leaves but be sure and wash them well), ONIONS (especially skins), tomato skins, and herbs. I like sage, thyme, bay and maybe rosemary. I like to add whole peppercorns too, they can be strained out whereas ground pepper falls to the bottom. I don't add any salt, preferring to do that at the last minute on the finished dish. Just experiment, you will find out what works for you!
