Guest guest Posted August 21, 2009 Report Share Posted August 21, 2009 Crockpot Garlicky Barley Potato and Amaranth Stew 1 1/4 cups barley 1 large potato, peel, chop into bite size pieces 1/2 cup amaranth (I get grain at health food store) 2 to 4 crushed cloves garlic 1 tbsp. parsley or to taste 1/2 tsp. oregano or to taste 1/2 tsp. marjoram or to taste 4 cups water to cover and above some, keep adding more water as necessary 1 cup corn, frozen or fresh 1/2 onion chopped to taste Toss everything in the slow cooker and start it on high for 2 hrs. then lower.
