Guest guest Posted February 24, 2009 Report Share Posted February 24, 2009 Crockpot Curried Zucchini and Apple Soup 1 1/2 lbs. zucchini, sliced 2 large apples, peeled, cored, chopped 2 large onions, diced 1/2 cup rice (we used white, but any should work) 4 cups vegetable stock 2 tsps. curry powder 3 tbsps. milk or soy milk Mix curry powder and stock together. Place all of the other ingredients into the crock pot. Pour the stock over top. Cover and cook for 8 to 10 hours on Low. When ready to serve, puree soup in a blender or use a hand held device in the crock pot (saves washing another item). Add 3 tbsps. milk per serving and enjoy. Serves 8 to 10.
