Baking Mix = 1 3/4 C. flour, 2 1/2 t. baking powder and 3/4 t. salt. Cut in 1/3 C. shortening until it looks like fine crumbs 1/4 C. Bread Crumbs dry = 1/4 C. crushed cracker crumbs, corn flakes or oatmeal 1 C. Buttermilk = 1 T. vinegar + milk to make 1 cup 1 T. Capers = 1 T. chopped green olives 1 oz. Unsweetened Chocolate = 3 T. cocoa + 1 T. shortening 1 oz. Semisweet Chocolate = 1 oz. unsweetened chocolate + 1 T. sugar 1 C. Semisweet Chips = 6 oz. semisweet baking chocolate chopped 1 T. Cornstarch = 2 T. flour 1 T. Fresh Herbs = 1 t. dried 1 C. Honey = 1 1/4 C. sugar + 1/4 C. water or apple juice 1/2 C. Leeks = 1/2 C. sliced shallots or green onions 1 C. Sour Milk = 1 T. lemon juice or vinegar + sweet milk to make a cup 1 C. Molasses = 1 C. Honey 1 T. Prepared Mustard = 1 t. dry mustard 1 T. Minced Onion (dehydrated) = 1 small fresh onion 1 t. Poultry Seasoning = 1/4 t. ground thyme + 3/4 t. ground sage 1 C. Sour Cream = 1 C. plain yogurt 1/2 C. Tomato Paste = 1 C. tomato sauce cooked uncovered to reduced 1/2 cup 2 C. Tomato Sauce = 3/4 C. tomato paste + 1 1/4 C. water 1 C. canned Tomatoes = about 1 1/3 C. cut up fresh, simmered 10 minutes 1 C. Red Wine = 1 C. apple cider or half cup grape juice with water or broth of choice 1 C.
