Guest guest Posted November 2, 2008 Report Share Posted November 2, 2008 Crockpot Pasta Sauce With Sausage And Sun-Dried Tomatoes olive oil as needed 3 of the Tofurky Italian sausages or Yves brand, cut in thick rounds 1 medium onion, chopped 1/4 cup shredded carrot 1 sweet bell pepper, use red or yellow 1 yellow summer squash or zucchini, chopped 1/2 " pieces 2 garlic cloves, minced 4 to 6 fresh basil leaves, chopped 6 sun-dried tomatoes, diced (I use the ones in oil) 1/2 tsp Italian seasoning 1 6 oz. can small can tomato paste 1 15 oz. can diced tomatoes, undrained 2 tablespoon water Brown the rounds in a little olive oil; add onions and saute until onions are slightly browned. Place rounds in the crockpot with the onion. Add remaining ingredients; cover and cook on LOW for 6 to 8 hours, or 3 to 4 hours on HIGH (you may need a little more water if you cook it on HIGH). If the sauce is a too thick, add a little more water. I sometimes add an extra tablespoon or 2 of water.Yields 4 servings. Use with cooked pasta or make an open faced hot sandwich with it.
