Fast, Hesston, KS Serving Size : 8 Preparation Time :0:00 Categories : 5-7quart Diabetic Slow Cooker Vegetarian WW Points Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon canola oil 1 large onion -- chopped 3 cloves garlic -- minced 1/2 cup dried apricot -- diced 1 1/2 cups red lentils -- dried 1/2 teaspoon cumin 1/2 teaspoon dried thyme 3 cups water 29 ounces broth -- (2 - 14 1/2 oz cans) 14 1/2 ounces diced tomatoes -- canned 1 tablespoon honey 1/2 teaspoon black pepper -- coarsely ground 2 tablespoons chopped fresh mint 1 1/2 cups plain yogurt Combine all ingredients except mint and yougurt in slow cooker. Cover. Heat on high until soup starts to simmer, then turn to low and cook 3-4 hours. Add mint and dollop of yogurt to each bowl of soup.
