Guest guest Posted September 5, 2008 Report Share Posted September 5, 2008 Marilyn, Plan your meals and recipes around cooked beans (or dried peas, lentils, split peas, etc.) and you and your family not only will be eating healthier food--it will save you money. Even the " exotic " heirloom " gourmet " beans are cheaper by the pound than meat seems to be--and a pound of dried beans, when cooked, make several servings. You can season sa crock pot of cooked beans the way you like...add them in with cooked rice or put them in a stew or soup...mix them into spaghetti sauce and serve them over pasta...mash them up and add whatever seems interesting to them--and fry them or roll up the mashed beans into tortillas for burritos...Beans are very versatile! This is just one possibility of many. Making vegetarian vegetable soup or a stew in your crock pot is another idea. Or simmering meatless tomato sauce for topping pasta is another. Or making baked potatoes (I have done this--some people don't like crock-pot baked potatoes; I do! EXPERIMENT! If you like using your crock pot, there's no reason to get rid of it just because you have gone vegan. You just won't cook meat in it anymore--lots of other things to try out cooking in your crock pot instead! I LOVE my crockpot, but until recently was only using it to make the traditional meat-based dishes. Now I am trying to feed my family mainly vegan, and I am not quite sure how to make kid-friendly, super easy meals in my crockpot without resorting to using meat! I hope to get some ideas here.
