Guest guest Posted September 6, 2008 Report Share Posted September 6, 2008 Our family likes this one from the Moosewood Cookbook by Mollie Katzen: Moosewood Vegetable-Walnut Pate 1 tablespoon vegetable oil 1/2 cup minced onion 1/2 teaspoon salt 1 1/2 cups chopped fresh green beans 2 hardboiled eggs 1/4 cup chopped walnuts 2 teaspoons fresh lemon juice 1-2 tablespoons mayonnaise handful of parsley Heat oil in a small skillet. Add onion and salt and saute over medium heat for about 10 minutes (or until the onion begins to brown). Add the green beans and saute until they are tender (another 8-10 minutes). Combine everything in a food processor and grind into a uniform paste. Taste and season with salt & pepper and pulse again if necessary. Serve as an appetizer with crackers and raw veggies, or as a great sandwich spread (I like it as a sandwich on toasted whole wheat bread).
