Guest guest Posted August 2, 2008 Report Share Posted August 2, 2008 Crockpot Spicy Tofu and Fruit 10 ozs. firm tofu; cube (I freeze and thaw to get a chewy texture) 1/2 cup apricot halves, dried 1/2 cup prunes, pitted 1/4 cup raisins 1/2 cup orange juice 1/4 cup white wine or you may use white grape juice 2 tbsps. white wine vinegar or cider vinegar 1 tbsp. cornstarch 2 tbsps. sugar 1/2 tsp. cinnamon 1/2 tsp. allspice 3 cups rice; cooked, brown rice is my favorite Put tofu, apricots, prunes, and raisins in slow cooker. In small bowl combine other ingredients. Mix to dissolve cornstarch. Pour over tofu and fruit. Cover and cook on low for 7 to 8 hours. Serve over rice.
