Guest guest Posted July 21, 2008 Report Share Posted July 21, 2008 Butternut Squash and Apples - Crockpot recipe 1 t. salt 1 butternut squash(about 2 lbs) peeled, seeded 2 apples, cored and cut into slices 1 medium onions, quarted and sliced 1 1/2 T. butter Cut the butternut squah into 2 inch pieces and place in the crockpot. Add apples and onions. Sprinkle with salt and stir well. Cover and cook on LOW for 6-7 hours or until vegetables are tender. Just before serving, stir in butter and season to taste with additional salt. Makes 4-6 servings. VARIATION - Add 1/4 -1/2 c. packed brown sugar and 1/2 t. ground cinnamon with butter, just before serving. Mix in well and cook an addtional 15 minutes more.
