Guest guest Posted July 8, 2008 Report Share Posted July 8, 2008 This is an old recipe from a miso container. My friend gave it to me years ago. It's always been a favorite of mine. Bertha Vegetarian French Onion Soup in the Crockpot 4 cups (more or less) sliced brown onions butter or olive oil black pepper miso paste (3 or 4 tablespoons) I use a dark miso in this recipe 4 cups water or mix with vegetable broth (heat it before adding) swiss cheese bread, I like to use stale French or Italian bread dijon mustard Slice onions and put in slow cooker with butter or olive oil and add pepper. Set at medium-high temperature for 3 to 4 hours. When the onions are soft, add water (make sure the water is hot, don't add cold water if you have a ceramic crockpot) and also add the miso. Do not boil because you will destroy the beneficial properties of the miso. Stir and let blend for 1/2 hour. Preheat oven to 400 degrees. Ladle soup into oven safe ceramic serving bowl. Put mustard on bread and place face down in soup bowl. Place swiss cheese on top and place in oven until the cheese is lightly brown and bubbly.
