Guest guest Posted July 2, 2008 Report Share Posted July 2, 2008 Heavenly Italiano Zucchini - Crockpot! 2 pounds zucchini, cut into 1-1/2 inch pieces 1 8 ounce can stewed tomatoes 1 to 2 cloves garlic, chopped optional 1/4 tsp oregano or Italian Seasoning 1/2 tsp salt 1/4 tsp pepper parmesan cheese, grated Place zucchini in a crock pot, and combine remaining ingredients, except cheese. Pour mixture of ingredients over squash and cover. Cook at high temp for 2 to 4 hours or until zucchini is just tender. Serve topped with a sprinkling of parmesan cheese.
