You can see the changes I made and products I used in my notes within the recipe. Mary * Exported from MasterCook * Ratatouille Recipe By :page 107 Serving Size : 4 Preparation Time :0:00 Categories : Crockpot/Slowcooker Entree-Vegetable Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 2 medium onions -- diced* 3 garlic cloves -- minced 1 medium zucchini -- sliced thin 1 bell pepper -- diced 1 small eggplant -- diced 29 1/2 ounces whole tomatoes in juice (1 can) -- tomatoes crushed by hand** 1 tablespoon dried Italian seasoning salt -- to taste pepper -- to taste *recipe states 1 onion **recipe states 28 ounces 1. Pour oil into a skillet set to medium heat. Add the onions and saute for 5 to 6 minutes or until soft and translucent. Add the garlic and saute for 1 minute more, then remove from heat. 2. Add the zucchini, pepper, garlic, eggplant, tomatoes with juice, sauteed onions and Italian seasoning to the slow cooker. Cook on high for 2 1/2 to 3 hours or on low for 5 to 6 hours. PER SERVING: 160 cal, 5 g pro, 22 g carb, 7 g fat, 0 mg chol, 8 g fiber, 740 mg sodium [Mary's Notes: Supper on 3/11/07. My first experience with this type of dish. I loved it, however, I loaded it down with many/much more spices than called in this recipe. I served it over barley! My husband didn't care for it but that was expected as he doesn't like " tomatoey " dishes. He had something different for supper. Changes I made/products I used: no olive oil as I used nonstick spray, 2 onions instead of one, Hunt's No-Salt-Added Whole Tomatoes a total of 29 1/2 ounces, and no salt. During the last hour of cooking I added onion powder, garlic powder, Mrs. Dash Southwestern Chipotle {enough to make it very tongue tingling!} and freshly ground black pepper.
