Guest guest
This is a real stick-to-yer-ribs vegetarian recipe that I made up one day. I was inspired by an omnivore recipe that used ground up critters, but I thought to myself that there had to be a way to make it so no wee varmints were harmed. Reading my meat-out Monday newsletter a few days ago, and was happy to learn Ol' Clint Eastwood is a vegetarian; vegan in fact. Well, I could see him having a plate of this out on the open range, couldn't you? Wild West Veggie Casserole 1 medium onion, chopped 1 Tbs. olive oil 1 (12 oz.) package veggie ground 5 to 6 potatoes, sliced thin 1 (15 oz.) can red beans, rinsed and drained 1 (14.5 oz. ) can diced tomatoes 1 Tbs. flour 1 tsp. chili powder 1 tsp. smokey paprika 1/2 tsp. cumin powder Salt and pepper Saute the chopped onion in the vegetable oil until softened. Mix with the veggie ground and pour mixture into a greased crock pot. Layer the sliced potatoes over top. Add the beans on top of the potatoes. Mix the can of diced tomatoes [juices and all] with the flour, chili powder, paprika, cumin, and salt & pepper to taste. Pour this over the bean layer, but do not stir. Cook on low for about 7 hours or until potatoes are tender. Yield: about 4 to 5 servings Served with extra hot sauce, sour cream, chopped black olives, lettuce, tortilla chips, etc. Whatever strikes your fancy. ~ PT ~ Walk around feeling like a leaf. Know you could tumble any second. Then decide what to do with your time. ~ By Naomi Shihab Nye, From The Art of Disappearing
