Very Veggie Mediterranean Stew 3 Tbs. olive oil 1 red bell pepper, seeded/chopped 1 green bell pepper, seeded/chopped 1 large onion -- chopped 3 cloves garlic -- minced 1 medium eggplant -- chopped 2 small tender zucchini -- chopped 2 cans diced tomatoes -- with juices 2 cans garbanzo beans -- (14 oz.) drained/rinsed 1 Tbs. oregano 1 Tbs. basil Freshly ground black pepper 1 tsp. sea salt 1 can artichoke hearts packed in water -- (14 oz.) drained/chopped Crumbled feta cheese 1 package egg noodles -- cooked Saute the red pepper, green pepper, onion and garlic in the olive oil until softened. Add all ingredients except for noodles and cheese to the crock pot and stir well. Cook on low for 8 hours.
