Guest guest Posted June 19, 2008 Report Share Posted June 19, 2008 @@@@@ Slow Cooker Caribbean Beans and Rice 3 cans (10-oz) S & W Caribbean beans 1 cup converted rice, uncooked 1 cup frozen chopped green peppers 1 cup frozen chopped onions 1/2 T crushed garlic 2 T tomato paste 2 T Jamaican jerk seasoning blend, salt free if you have it 1 1/2 cups low sodium broth 1. In a 4-quart slow cooker, combine beans, rice, green peppers, and onions. 2. In a medium bowl, whisk together garlic, tomato paste, jerk blend, and broth. Pour into slow cooker and stir thoroughly. 3. Cover and cook on HIGH setting for 4 to 5 hours.
