Guest guest Posted June 19, 2008 Report Share Posted June 19, 2008 Crockpot White Bean Fiesta Stew 1 lb. dried white beans 3/4 cup lentils 4 cups water 2 cloves garlic, minced 3 links Tofurkey Italian sausage, sliced in thick rounds 1 medium onion, chopped 3 stalks celery, chopped 1 10 oz. can Ro-tel brand tomatoes (they are spicy) 1 tsp. salt 1 tsp. ground black pepper chopped green onions for garnish, optional Soak white beans overnight. Drain beans and put into crockpot, add lentils, water, garlic,Tofurkey sausage, onions, celery, salt, black pepper and Ro-tel tomatoes. Cook on low for 7 - 8 hours. Ladle into individual soup bowls and garnish with chopped green onions, including tops. Serve with French bread and salad. Serves 4 to 6.
