Guest guest Posted May 12, 2004 Report Share Posted May 12, 2004 i am a diabetic and am looking for recipies that i can eat. we have started making our own crockpot jams from 3 cans of fruitjuice sweetened fruit like libby's peaches. i mash it with a potatoe masher but leave chunks. i add 1/4 to 1/3 cup of instant tapioca to thicken it depending on how juicy the fruit is and a tbsp of lemon juice. i/4 tsp ground cloves and cook it on high for 2 or 3 hours stiriing at least every hour with the lid on. we haven't paid those high prices for the sugar free jams at the grocery in almost a year..
