Guest guest Posted April 6, 2004 Report Share Posted April 6, 2004 Black Bean Chili 2 cups water 2 cups apple juice 1 tsp. dried oregano leaves 3 Tbsp. tomato paste 1 tsp. ground cumin 1/8 tsp. cayenne pepper 2 onions, chopped 3 cloves garlic, chopped 2 4-oz. cans chopped green chilies, drained 2 15-oz. cans black beans, rinsed and drained 2 red bell peppers, chopped 1/4 cup chopped fresh cilantro 1 cup shredded Cheddar cheese Combine all ingredients except cilantro and cheese in 3-4 quart slow cooker. Cover and cook on low for 8 hours. Stir in cilantro just before serving.
