Posole Ingredients: 1 onion, chopped 3 bell peppers (red or green), chopped 1 15-oz can kidney beans, rinsed and drained 2 28-oz cans diced tomatoes, drained 3 15-oz cans white hominy, rinsed and drained 1 3-oz can mild green chilies, drained 1 tablespoon chipotle peppers in adobo sauce 1 15-oz can red enchilada sauce 1 tablespoon oregano 1/2 teaspoon salt Directions: Lightly coat the inside of your slow cooker with non-stick cooking spray. Combine all of the ingredients in the slow cooker. Cover and cook on low for 8 to 10 hours.
