Guest guest Posted February 1, 2004 Report Share Posted February 1, 2004 Actually this simple recipe can be used with any greens but I made spinach this way last week... In a large pot cover the bottom with a good extra virgin olive oil (IMHO one should never skimp on olive oil...it is worth the extra money and truly makes a difference)...add chopped onion, garlic, salt (or Bragg's, Tamari, etc...) and pepper. Saute onions till translucent then add spinach (or other greens) I use frozen and cook at least two pounds at a time. (Fresh is better but more work!) Stir your greens of choice into the onion/oil/seasoning mixture...put a lid on it and let it cook down over a low flame. If you are brave you can add a squeeze of lemon and a few drops of Tabasco to this as it slowly " stews. " This mixture can be served over potatoes, brown rice, millet or Kashi. If you eat cheese or make one of the un-cheez's you can make a casserole with the spinach and grain product. You can also make a garlic tofu dressing to pour over it if desired. ( 1 block soft silk tofu, garlic, salt, pepper...whirred in blender...yummy!) Another option is to saute mushrooms with the spinach or to stuff the spinach mixture in portabello caps and then broil. I love spinach and do all kinds of fun stuff with it but this is my starting recipe. (or what passes for a recipe in my kitchen!) In case I haven't said this before...I don't use recipes or measurements when I cook...I just cook.
