30 day OAMC plan (freezer cooking)

some of these recipes could be prepared in a slowcooker, so I thought I would

pass it along for any of you who might be interested

This is long, but it has the shopping list, the menus and the assembly. I

haven't tried it, just found it.

Shopping List

The quantities listed are sufficient to make five of each of the meals, each of

which serves 10. Modify quantities and recipes according to your family size.

Also quantities are deliberately generous so that you will be able to freeze

what is left over for later use.

 

Grains

50 c. whole grain or vegetable macaroni

15 c. corn meal

5-10 c. whole wheat bread crumbs

25 lbs. long grain brown rice or 20 lbs. brown rice and 5 lbs barley, millet or

quinoa

 

Vegetables

5 cucumbers

4 large jicama

1 bunch parsley

10 c. chopped black olives

30 c. corn

40 onions

2 bunches celery

5 bunches spinach

65 green peppers or a mix of 40 green peppers, tomatoes, onions, for coring and

steaming and stuffing and 25 green peppers 3 bunches green onion 7 garlic bulbs

(approx 35 cloves)

10 c. mushrooms

5 heads of cabbage

50 potatoes

2 1/2 c. green chilies

2 #10 cans of tomato sauce(6 lb. 15 oz.)

Dairy

10 c. (2 1/2 qt.) yogurt or soy yogurt

 

Seeds

2 c. sesame seeds

12 1/2 c. cashews

10 c. shelled sunflower seeds

 

Eggs

2 1/2 dozen

 

Spices/Condiments

Tamari

Salsa (15 c.)

Thyme

Amino Acids (10 T.)

lemon juice

chili powder

Miscellaneous

10 lb. tofu and/or tempeh

Beans

15 c. dry red, pinto, white, calico or other beans

15 c. dry black turtle beans

Order of Preparation/Vegetarian Meals

Plan

* Plan menus if you don't use these.

* Use 6-7 different recipes or more if you are experienced, i.e. three of one

recipe, four of another until you reach 30. Multiply the ingredients in the

recipes you choose times the number of meals and make up a shopping list.

Shop

* Now shop or plan your cooking day to correspond to co-op delivery dates if you

belong to a co-op. In NO case shop the same day you cook! =)

Night Before

* Cook rice

* Cook barley or other grains if used.

* Set aside potatoes for storing

* Soak black beans

* Soak red, white or whatever other black beans you will be using for Taco

Potatoes

30 Meals Day

* Cook all beans

* Chop onions

* Slice celery

* Shred spinach

* Chop peppers (spare 40 peppers or mix of peppers, onions, tomatoes for

stuffing)

* Core 40 peppers or mix of peppers, onions, tomatoes

* Chop parsley

* Mince garlic

* Shred cabbage

* Chop bread for bread crumbs

* Steam cored peppers, etc. (Place large colander over large pot containing 2-3 "

boiling water. Put peppers or other vegetables to be stuffed in colander.

Steam until soft. Check regularly to see if more water needs to be added.)

* Slice tofu or tempeh

* Steam tofu or tempeh

* Beat eggs

 

Assembly order

* Assemble Taco Baked Potatoes (Easy, gets you off to a good start! =)

* Assemble Vegetarian Fried Rice

* Assemble Non dairy Macaroni (Must be made one recipe at a time)

* Assemble Sloppy Joes

* Assemble Lazy Woman's Vegetarian

* Assemble Cabbage Roll Casserole

* Assemble Tamale Corn Casserole

* Assemble Stuffed Vegetables

****************************************Recipes

Vegetarian Fried Rice

(serves 10)

2 lb tofu or tempeh (steamed 10 min. and cooled)

10 c. brown rice

3 T. oil

6 T. sesame seeds

1 c. sliced onion

1 c. sliced celery (my family doesn't care for celery, we omit it!) 1 bunch

shredded spinach leaves 6 eggs (optional), well beaten

3 T. tamari

In large heavy skillet or wok brown sesame seeds in oil. Add tofu or tempeh and

brown. Now stir in onions, celery, and spinach leaves. When cooked through (a

few min.) add rice. If you use eggs, make well in center of rice and drop in

beaten eggs. When eggs are thoroughly cooked, mix with rice and vegetables. Add

3 T. tamari, mix. Freeze in ziplock bags.

Non dairy Macaroni and " Cheese "

(serves 10)

10 c. whole wheat or vegetable macaroni cooked firm ( don't overcook) 2 1/2 c.

cashews 3 green peppers, chopped 3 chopped onions

1/2 c. lemon juice

3 cloves garlic, minced

7 c. water

1-2 c. whole wheat bread crumbs

2 T. olive oil

1 T. parsley

Blend cashews in blender or food processor to make fine powder. Add peppers,

onions, lemon juice, garlic, water. Blend. Pour sauce over noodles in large pan.

Heat through, stirring constantly. Freeze in ziplock bag. Saute bread crumbs in

oil, add parsley. Freeze in ziplock bag. To serve, thaw, pour into casserole

dish, sprinkle with bread crumbs. Tastes a lot like macaroni and regular cheese

but contains no animal fat.

 

Sloppy Joes (Vegetarian)

(serves 10)

1/4 c. olive oil

2 onions, chopped

1 green pepper, chopped

6 c. cooked black turtle beans

4 T. Amino Acids

1 t. oregano

2-4 T. Chili powder

2 c. tomato sauce

10 slices whole wheat bread or rolls

In large skillet or pan, saute onions and peppers in olive oil. Add remaining

ingredients. Freeze in ziplock bag. To serve, thaw. Heat through. Serve on

bread or rolls.

Lazy Woman's Vegetarian Cabbage Roll Casserole

(serves 10)

4 c. cooked brown rice

1/2 cup olive oil

1 onion, chopped

1 green pepper, chopped

1 c. mushrooms, chopped

4 cloves garlic, minced

1 c. sunflower seeds

1 head cabbage, shredded

4 c. tomato juice or tomato puree

In deep, heavy pot saute onion, pepper and mushrooms in oil until tender. Add

garlic and seeds. Add rice. In large pan layer 1 c. juice or puree, then 1/3 of

cabbage (approx.) then 2 c. rice and vegetable mixture. Repeat twice. Pour

remaining juice or puree over top. Cover and freeze. To serve, place directly

into 350 degrees oven from freezer. Bake 1 1/2 - 2 hours or more until cooked

through.

Taco Baked Potatoes (Vegetarian)

(serves 10)

Have 10 potatoes on hand

Have salsa on hand (3-4 cups)

2 c. yogurt or soy yogurt

Cooked red or black beans or any cooked beans, i.e., reds, whites, pintos, 4

cups.

Store salsa and cooked beans in separate plastic ziplock bags in freezer. To

serve bake potatoes in oven in skins 40 minutes or until soft. Thaw beans and

salsa. Heat beans through. Slice potatoes down center; spoon beans, salsa and

yogurt over potatoes.

Tamale Corn Casserole

(serves 10)

3 c. corn meal

8 c. water

6 c. whole kernel corn

2 c. chopped olives

1 c. onion

2 c. tomato sauce

1/2 c. green chilies (optional)

Boil water. Add corn meal. Cook until the consistency of mush. Cook corn,

olives, onion and chilies in tomato sauce over medium high heat until onion is

transparent. If mixture boils down too much add water. In casserole dish place

half of mush. Pour vegetable mixture over this. Top with remaining corn mush

mixture. Cover, freeze. Place directly into 350 oven from freezer. Bake 2 hours

or until hot and cooked through. This is VERY good!

Boy you would need a BIG crockpot to cook these recipes

I once caught a very big lobster in Cape Cod

and had to rent a pot to cook it in.

These recipes reminded me of that

Imagine cooking 25 lbs rice as only one ingredient

 

 

Ide have to rent space in a commercial kitchen to do it
