Guest guest Posted January 18, 2004 Report Share Posted January 18, 2004 Hello list -- I've been snooping around here the past few weeks, ever since my boyfriend's mom gave us her old Crock Pot (it's actually called a Crock Watcher). I just tried my first recipe yesterday and it turned out great. My dad makes this all the time (it might be the only thing he does make in his crock) and it's super tasty: Cheesy Rice and Broccoli (for lack of a better name) 1 stick butter or margarine, cut into pats 2 boil-in-bag bags of Success Rice (3.5 oz bags) 1 can mushroom soup (the normal size can -- 12 oz? 14 oz? I forget) 1 lb. chopped frozen broccoli 8 oz Velveeta, cubed 1 1/2 soup cans water * Put everything in the Crock Pot and set it on low. You'll cook it on low for five hours, but after about an hour and a half (once the cheese is melted), stir it up. My dad says at this point you should see if it looks too dry, and if it does, don't cook it the full five hours. I followed the instructions to the letter, though, and it turned out wonderfully in exactly five hours. It starts out kind of soupy, then cooks down to a nice thickness. This rice is really yummy, but for my next Crock Pot feat, I'd like to try something a little less cheesy/buttery/starchy. I'm off to troll the vegcrockpots archives. Thanks for a good list!
