Guest guest Posted January 1, 2004 Report Share Posted January 1, 2004 I wanted to introduce myself to all of you. My name is Carol, I'm 45 years old, married, and a SAHM. I found this site when I was looking for a recipe. I love cooking in my crockpots (I have 5 of them!), and I am a vegetarian, living in house full of carnivores!! OK..here's the truth. I stopped eating meat exactly a year ago. I had to. It was literally making me sick! Every time I ate meat (and I mean just a small portion), I would get sick. My stomach would cramp up...and you can guess the rest. My doctors had tried for years to treat me for ulcers, IBS, and other digestive ailments. We all thought that it was the spices or the fried foods that were causing me to be sick. So, last January, I took it upon myself to figure out what was wrong. I deleted meat from my diet for a 2 week period...and never went back! I can now eat all foods...hot and spicy, fried, whatever...as long as I don't eat any meat! I have a VERY understanding and supportive husband. I still cook meat for him and our daughter...and anyone who comes to visit. But I make something else for myself. Normally, my husband tries whatever I'm having...and ends up asking me to make it again!! He'll never give up eating meat...but he loves my " side dishes " . Anyway...that's my story.
