Guest guest Posted December 4, 2003 Report Share Posted December 4, 2003 Here's one I got from a base magazine while stationed on Okinawa. It's served at a very popular restaurant there. The original version calls for a bit of milk to finish, but you could use water or even soymilk. Pinto Bean Soup 1lb pinto beans, picked, washed and soaked overnight in 2 qts water 1 can tomato puree 1 clove garlic 1 T salt 1 tsp pepper 1 T chili powder 1 tsp worcestershire 1/2 tsp hot sauce 1/4 C milk(sub soymilk or water, if desired) 2 T flour butter or margarine for richness(optional) Don't drain water from soaked beans. Add tomato, salt, pepper, garlic, chili powder, worcestershire, and hot sauce. Cook on low until beans are tender. Add flour to milk to make a paste and add to bean mixture.
