Red Beans and Pasta

Amount Measure Ingredient -- Preparation Method

3 15 oz cans vegetable broth

1/2 teaspoon ground cumin

1 tablespoon chili powder

1 clove garlic -- minced

8 ounces uncooked spiral pasta

1/2 large green pepper -- diced

1/2 large red pepper -- diced

1 medium onion -- diced

1 15 oz can red beans -- rinsed and drained

chopped fresh parsley

chopped fresh cilantro

 

Combine broth, cumin, chili powder, and garlic in slow cooker.

 

Cover and cook on high until mixture comes to a boil.

 

Add pasta, vegetables, and beans. Stir together well.

 

Cover and cook on low for 3 to 4 hours.

 

Add parsley and cilantro before serving.
