Creole Black Beans (Adapted)

Amount Measure Ingredient -- Preparation Method

1 1/2 pounds vegetarian " smoked sausage " -- (to 2 lbs.) sliced in

1/2 " pieces & browned

3 15 oz cans black beans -- drained

1 1/2 cups chopped onions

1 1/2 cups chopped green bell pepper

1 1/2 cups chopped celery

4 cloves garlic -- minced

2 teaspoons dried thyme

1 1/2 teaspoons dried oregano

1 1/2 teaspoons pepper

1 vegetable bouillon cube

3 bay leaves

1 8 oz can tomato sauce

1 cup water

 

Combine all ingredients in slow cooker.

 

Cover and cook on low for 8 hours or on high for 4 hours.

 

Remove bay leaves.

 

Serve over rice with a salad and fresh fruit for dessert.

 

Variation: You may substitute a 14.5 oz can of stewed tomatoes for the tomato

sauce.
