Ranck Serving Size : 6 Preparation Time :0:00 Categories : Beans & Legumes Fix-It & Forget-It Entertainin Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 16 oz can pinto beans -- drained 1 16 oz can kidney beans -- drained 1 2.25 oz can ripe olives -- sliced & drained 1 28 oz can stewed or whole tomatoes 3/4 pound Boca Italian Sausages 1 tablespoon oil 1 green pepper -- chopped 1 medium onion -- chopped 1 clove garlic -- minced 1 teaspoon salt 1 teaspoon dried oregano 1 teaspoon dried basil Parmesan cheese Combine beans, olives, and tomatoes in slow cooker. Brown " sausage " in oil in skillet. Drain, reserving oil. Transfer " sausage " to slow cooker. Saute green pepper in oil 1 minute, stirring constantly. Add onion and continue stirring until onions start to become translucent. Add garlic and cook 1 more minute. Transfer to slow cooker. Stir in seasonings. Cover and cook on low for 7 to 9 hours. To serve, sprinkle with Parmesan cheese.
