I work at Espanola Hospital and commute from Santa Fe. My crock pot make the veggies for the family as well as lunch for me at work. I freeze meals from the crockpot, too. Talk about convenience! I threw this together in my crockpot and everyone liked it: Colorful Curried Veggie Pot 1 eggplant, chopped 2 carrots, chopped 1 bell pepper, cut in large peices 8 oz. garbanzo beans, canned or soaked 1/2 cup warm water 1-2 tsp curry powder 1 tsp rosemary 1 bay leaf 1 tsp black pepper 1 tsp veggie boullion 1/2 leak ,white and green leaves, chopped 2 garlic cloves, crushed Sautee the leak and garlic. Add with all other ingrediaents into crockpot and cook on low 8-10 hours or hi for 4-6 hrs. Serve with rice and melon slices. No I did not need to par boil the eggplant first.
