Cream of Lentil Soup

1 pound dried lentils

1 medium onion -- chopped

1 clove -- minced

1 medium carrot -- pared and chopped

1 large stalk celery -- chopped

3 cups water

1 cup heavy cream

salt

pepper

 

Soak beans in 6 cups of water overnight; drain. Place beans, onion, garlic,

carrot, celery, and water in crockpot. Cover; cook on low for 8 to 10 hours.

Stir in heavy cream; add salt and pepper to taste. Serve hot.
