This was incredibly easy:

 

2 t olive oil

1/2 cup diced onions

1/2 cup diced celery

1/2 cup chopped bell pepper

1 can stewed tomatoes

1 can blackeyed peas, undrained

 

Put olive oil, onions, celery, and bell peppers in crockpot on high for

about 20 minutes, stirring occasionally.

 

Add tomatoes and blackeyed peas. Turn heat to low for 4 hours.

 

Serve over rice.
