Potatoes in Spaghetti Sauce

8 large baking potatoes -- up to 10

26 ounces meatless spaghetti sauce

1 teaspoon minced garlic

3/4 cup chopped onion

2 tablespoons chopped fresh parsley

2 tablespoons chopped fresh basil or oregano -- optional

1 cup grated parmesan cheese for sprinkling -- optional

 

Peel potatoes and cut into 1 /2-inch chunks. Place potatoes, spaghetti sauce,

garlic, onions, parsley and basil or oregano in the slow cooker. Cook on low

heat for 10 hours, or on high heat for 4 hours, until potatoes are tender.

Sprinkle top of sauced potatoes with Parmesan cheese.

NOTES : There are a large variety of bottled sauces on the market today. I

prefer meatless basil and tomato sauce and usually throw in a handful of chopped

fresh basil. Of course, you can always use your favorite spaghetti sauce

recipe.
