I don't have one specifically designed for the crockpot but I have Hinman's mixed bean which we could convert for the pot... * Exported from MasterCook * Mixed Bean Goulash Recipe By :Bobbie Hinman Serving Size : 8 Preparation Time :0:00 Categories : Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons vegetable oil 2 large onions -- thinly sliced (2 cups) 1 large green bell pepper -- thinly sliced (1 cup) 2 cups defatted low-sodium vegetable broth 6 ounces tomato paste -- (canned) 16 ounces canned kidney beans -- rinsed and drained 16 ounces canned white beans -- rinsed and drained 10 ounces frozen lima beans 2 medium potatoes -- scrubbed, cubed (1/2-inch) 2 tablespoons paprika 1 teaspoon dried basil 1/2 teaspoon caraway seeds 1/2 teaspoon salt 1/4 teaspoon pepper TOPPING: 1 cup plain nonfat yogurt Heat oil in large saucepan over medium heat. Add onions and bell pepper. Cook, stirring frequently, 5 minutes. (Add small amounts of water if necessary instead of more oil to cook the onions and pepper.) Add remaining ingredients, except yogurt. Mix well. Bring mixture to a boil, then reduce heat to medium-low, cover, and simmer 45 minutes or until potatoes are tender. Stir several times while cooking. Serve over noodles or rice and top each serving with yogurt. SOURCE: The book was first published as the Meatless Gourmet: Favorite Recipes from Around the World.
