Guest guest Posted January 6, 2002 Report Share Posted January 6, 2002 * Exported from MasterCook * Angostura Bean Soup Recipe By :The Vegetarian Slow Cooker by Joanna White, page 62 Serving Size : 6 Preparation Time :0:00 Categories : Soups & Stews The Vegetarian Slow Cooker Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 cups dried small white beans water to cover beans 1 quart water 1 tablespoon butter or margarine 1 cup diced onions 1 teaspoon salt 1/8 teaspoon black pepper 1 bay leaf 1 tablespoon angostura bitters 1/2 cup ketchup Place beans in a bowl, cover with water and soak overnight. Cover and cook on high heat for 1 1/2 to 2 hours. In a colander, drain beans, rinse and add to the slow cooker with 1 quart water. Heat butter in a skillet on medium-high heat and sauté onions until translucent. Add sautéed onions to slow cooker with salt, pepper and bay leaf. Cook on low heat for 4 to 6 hours or until beans are tender. Add angostura bitters and ketchup about 30 minutes before serving. Remove bay leaf before serving. Taste and adjust seasonings.
