Guest guest Posted December 31, 2001 Report Share Posted December 31, 2001 Spanish Rice 1½ c.raw long grain rice ½ c. olive oil, butter or margarine 1½ c. tomato juice 1½ c. water onion (as much as you like) green pepper (as much as you like) 1½ tsp. salt 1 lb vegetarian hamburger, browned Directions: Saute rice in oil until golden brown. Put in crockpot with all remaining ingredients. Stir well. Cover and cook on low 4-6 hrs or on high 2- 3 hrs. You can also substitute tomato juice for some or all of the water, depending on how much tomato flavor you want.
